Lemon Poundcake
Makes one bundt cake
3 cups sugar
1/2 lb. (2 sticks) butter
6 eggs
8 oz. heavy cream
2 tsp vanilla or pure lemon extract
3 cups flour
Grease and flour a bundt pan. Preaheat oven to 350 degrees.
Cream butter and sugar very well until light and fluffy. Add eggs, 1 at a time, beating well after each one. Add heavy cream and flavoring, mix well. Gradually add flour and beat an additional 2 minutes. Transfer mixture to prepared pan. Bake for 50 minutes to 1 hour, or until toothpick inserted comes out nearly clean.
Note: Randy has ad-libbed with this recipe, such as adding a lemon glaze when he didn't have lemon extract on hand.
